Interesting stuffs

I've got a lot on my mind right now.  It's been racing like crazy for two days (gotta love mania) so I'm gonna take a few to write some of it down here so I don't forget it.  There's some interesting ideas for stuff to make, if you wanna see them. :)

I've been doing a lot of baking lately, and I found this.  I think it would be FUN to make some and use it the next time I make some cake stuffs. :)  AND, I could make it whatever flavor I wanted, which would be awesome. :)

APPLE CRUMBLE
SUPER easy apple crumble
 
Oh my gosh!!!! How easy is this???

About 5 to 7 granny smith apples (or whatever you prefer), peeled, cored & thinly sliced
1 (9 ounce) package yellow cake mix
2 tablespoons sugar
1 tablespoon ground cinnamon...
1 stick real butter

Directions:

1. Preheat oven to 350°F.
2. Cut apple slices crosswise in half.
3. Place in pan; sprinkle with dry cake mix.
4. In small bowl, combine sugar & cinnamon; sprinkle over cake mix.
5. Drizzle with butter.
6. Bake 30 minutes or until topping is golden brown.
7. Serve warm with ice cream, if desired!

PS.... I do this with peaches also.... so good....and you can add more than one stick of butter about 1/2 thru the baking process and it just makes the crunchy-ness a little more... most times just 1/2 stick more

MINI PINAPPLE UPSIDE DOWN CAKES
 
This would be super fun for a kids party, or any party for that matter.  I LOVE IT!  Gonna have to try to make some soon, cause I know my family LOVES this!
 
2 eggs
2/3 cup white sugar
4 Tbsp pineapple juice...
2/3 cup all purpose flour
1 tsp baking powder
1/4 tsp salt

Topping:

1/4 cup butter (1/2 stick or 4 Tbsp)
2/3 cup brown sugar (packed)
1-can pineapple rings
6-maraschino cherries

Preheat oven to 350 degrees. Spray your muffin tins with non-stick cooking spray.

In a mixing bowl, add eggs, white sugar, and pineapple juice. Beat for 2 minutes. In a separate bowl, sift together the flour, baking powder, and salt. Add to the wet ingredients and turn mixer back on for 2 minutes.

In a small sauce pan, melt the butter and add the brown sugar. Stir on low heat for one minute.

Spoon a layer of the warm brown sugar mixture into the bottom of each muffin tin, then place a pineapple ring on top. Add a cherry in the middle of each pineapple. Pour cake mixture over to fill muffin tin 3/4 of the way full. If you are using regular muffin tins, you will need to cut down the rings to fit or just use pineapple tidbits.

Bake jumbo cakes for 25 minutes. Bake regular cakes for 20 minutes. If you choose to make a large cake, bake for 22-25 minutes in a 10 inch cast iron skillet. The cake is done with a toothpick inserted in the middle comes out clean.

Remove from the oven. Let cool in pan for 3 minutes. Run a knife around the edge of each cake to help loosen in case it sticks a little. Place a wire cooling rack on top, and quickly flip over on top of sheet tray to catch extra drippings.
Place wire rack of cakes on sheet tray to cool.

I saw something that I'm gonna have to try with my girlies.  You have them wear an old pair of socks destined for the trash anyway over their shoes and then take a nature walk.  The socks will get COVERED with dirt and  other stuff, and then you come home and spritz it with water and put it in a ziplock bag and see what grows.  Could be a FUN science experiment. :)

This would be YUMMY!  AND it's super easy too!  SOO gonna have to try this for our next BBQ cause I know it would go over SOO well, haha. :p

I love Crochet.  And these would be SOO easy!  Thinking about making some of these for the girls bedrooms in their colors.  :)  AND once we get their room reorganized (which is going to take FOREVER, but whatever) I might make some of these for around their bed too.  LOTS of ideas for this!

These are super cute, and super easy.  Another party food idea.  It's chocolate pudding with whipped cream on top, then sprinkle with mini chocolate chips, and put a graham cracker piece in.  SUPER cute, and easy too.  And you could do it with whatever flavor pudding you wanted to do too!  Gonna have to do this for the next party I have too! :)

I think I'm going to have my Sifu and Taitai (Sifu was just diagnosed with a really bad cancer - 20%-30% chance of survival) make a video for the girls and I.  That way, even if he doesn't make it (He's a fighter, so I'm praying he does) we will have something to remember him by for years to come! :)  We don't get to see them nearly often enough!  I wish we could change that, but being broke keeps us stuck around here.  BUT, hopefully we can at least see him before they decide to move.  *Fingers crossed*.  I think that would be a good idea, so the girls don't forget him!  ya know?

I think I'm going to redecorate and reorganize the girls bedroom.  They have a bunk bed right now, but they don't really use the top bunk.  SOO, I think once we get rid of a lot of stuff I'm going to break it down into two twin size beds.  Then get a dresser for each of them and put them on the wall between the two beds.  Either that, or we will try to buy them two captains beds and put a bookshelf between the beds.  IDK for sure yet.  BUT, there's no reason to have the bunk beds if they won't use them anyway, you know?  Guess I'll see what happens. HOPEFULLY we can take care of that if/when I get my SS decision, ya know?  Guess we will see. :)

I think next year we are going to try to take the girls to Disney.  They are at a good age for it, and It would be fun for us too.  Even with my MS I bet I could have a really good time.  :)  Guess we will see how money works out, but I REALLY wanna make that happen, ya know?
